		<description>Okay, we love these - actually Dad LOVES these!  He doesn&#039;t even care if they aren&#039;t that good for you.  I made them vegan for neighbors who came to dinner, in fact my first all-vegan dinner.  I substituted the following:  long horn cheese= shredded soy cheddar;  2 eggs - energy egg replacer; 2 eggs=coconut milk (NOT lite).  They are delish, even though I still like the real cheese.  You can find the soy cheddar an almost any good grocery store, if they don&#039;t have a vegetarian/vegan section, look in the produce department.
